First Place recipe for SRR's Pumpkin Cook-off, November 3, 2011
1 16oz can of pumpkin
2 cups of granulated sugar
1 cup of vegetable oil
2 eggs
4 cups of flour
4 tsp baking power
1 tsp salt
2 tsp baking soda
2 tsp 2% milk
a generous sprinkle of cinnamon
a generous sprinkle of nutmeg
Combine the previous ingredients using an electric mixer. Bake for 10-13 mins at 375 on a cookie sheet lined with parchament paper. Cool the cookies on plates.
2 cups of confectionary sugar
1 cup of Marshmallo Fluff (from Somerville)
1.5 teasspoons of vanilla
1 cup of vegetable shortening such as Crisco
1/3 cup of 2% milk
a genrous portion of nutmeg.. (whatever you think tastes good).
